Banana is my most favorite post workout snack. You will always find some banana in my fruit bowl. Sometimes they overripe way too fast, but no need to worry. Ripe bananas are perfect for baking, for example for banana bread. It gives wonderful sweetness and makes banana bread super moist. Here you can find a very easy banana bread recipe.
I have adopted the recipe from provinzkinchen.com. My version of banana is gluten free, without oil and I also took more bananas than in the original recipe. Next time I would bake this banana bread without sweetener, bananas give enough sweetness, therefore I think additional sweetener is not needed at all.
Here is the recipe:
For banana bread:
100g corn flour
100g buckwheat flour
50g almond flour
50g birch sugar
4 mashed bananas
100ml oat milk (or any other dairy free milk)
6g baking powder
1/2 tsp ground vanilla
- Mash bananas and mix together with remaining ingredients.
- Preheat the oven to 180C.
- Put the mixture into the baking tin and bake for 45 minutes.
