This spicy amaranth, semolina porridge with turmeric and many other spices, was a kitchen experiment, which turned out to be a very good one. It is always so much fun to experiment with new ingredients or took cook with known ones, in an unusual way.
Lately my sister praised a turmeric latte a lot, so I thought why not to try to bake a porridge with turmeric and almond milk. If it works for a latte, I was pretty convinced, it will be a good combination for a porridge too.
The porridge turned out to be very delicious, all spices, the apple and the orange on the top were a perfect match. I never even thought about the idea using turmeric for a sweet dish, it was in my pantry for curries or soups. But you live and learn!
100g almond milk (or any other dairy free milk)
1 small grated apple
1 small orange
1/2 tsp ground turmeric
Pinch of ground vanilla, cinnamon, cardamom and anise
Some yoghurt or some more milk
- Mix all the ingredients together, top with sliced orange and leave covered in a fridge over night.
- In the morning preheat the oven to 180 C and bake for about 30 minutes.
- Serve with some yoghurt or pour some milk over the porridge.
