A quick, healthy lunch at the office is easier than you might think. You don’t have to eat sandwiches all the time. A jar makes it so simple to bring a lot of goodness for lunch to your office. Here are some ideas, what to take with you in a jar.
Brown rice with oven roasted hazelnut vegetables and oven baked salmon. You can top it with what ever fish, meat or cheese leftovers you have, up to your preference. Also vegetables can vary, use vegetables which are in season and bake with some coconut oil and chopped nuts.
Vegetable leftover jar. This jar is filled with every kind of baked and fresh vegetable leftovers, some cooked quinoa and yoghurt topping.
Hummus, vegetable and baked wrap jar. For this jar I took my hummus leftovers and topped with vegetables I had in the fridge, with some fried mushrooms and for some crispiness with oven baked wrap. Also bread croutons or rice crisps would be a perfect match.
As you can see from these lunch jars, it is pretty easy to have a healthy lunch at work. Just be creative and cook a little bit more when preparing dinner, so you have leftovers, you can be creative with. Pimp leftovers with a nice dressing or delicious vegetables.
